Here at Magnolia Holler we have three gardens, several fruit and nut trees, in addition to a small apple orchard.

(I have to brag, big sister rights, she completed her first half marathon this past Spring.) She asked if I'd like to run with her, my response "If it's fun, I'll run." She found one right up my alley, so I couldn't pass it up! (I'm a sucker for Zombies!) <br />

We ran in the 2013 Maryland <a href="http://www.runforyourlives.com/" target="_blank">Run For Your Lives </a>, Zombie Apocalypse 5k Obstacle Course Race. <br />

The race was set up with waves starting every 30 minutes, each wave maxed out at 500 runners. Our heat was at 10am and it was full, not all heats were sold out, so we were lucky (more runners = more humans for the undead to attack). Parking was about a mile away, they had shuttle buses to the start/finish line. This is also where check-in, vendors, and entertainment were located. They recommended arriving 2-hours prior, we arrived about an hour fifteen early and had plenty time. They also had a place available for camping, for the diehard racers. We were given a belt with three flags (similar to flag football). The goal of the race is to "survive" the Zombie Apocalypse, therefore to finish with at least one flag. The Zombies on the course try to take your flags while you're running. Everyone lined up at the start line; they didn't have it very well marked for the different groups based on race speed -Appetizer, Main Course, and Dessert. So, I'm not sure where we ended up. <br />
<br />
The very first obstacle was to run through a muddy pit, and then immediately following was another muddy water pit, about four feet deep, with logs to jump, roll, or climb over. Wet and muddy within the first minute! I LOVED it! The rest of the course had a section where we sprinted to dodge the Zombies, these sections included curved dirt paths, consecutive hills to run up and down, and woodland trails - complete with natural erosion and tree roots. <br />

Some of the obstacles included a "house of fog", which we belly crawled through, keeping our head down, there were live wires of varying length hanging from the ceiling. Rolling over huge hay bales, climbing over consecutive walls, crawling through huge irrigation tubes filled with muddy water, weaving through barricades, and climbing up a series of monster truck tires only to plunge down into 4 ½ ft deep water. <br />
<br />
Our strategy -- we found it easier to get through the hordes of Zombies in large groups, so we formed alliances with other runners. But alas, we became infected! We didn’t “survive” the Zombie Apocalypse. All in all, it was a thrilling and amazing adventure – I will gladly do it again! <br />

It's funny, right when our gardens get growing and I have lots to share, the trees leaf out and block the Internet signal! Our Internet has been spotty and sluggish all summer, now that the leaves are falling...I'm back! <div><br></div><div>Our pumpkin patch faired okay. I gave a few to a coworker for pumpkin ale, in exchange for several pounds of Concord grapes (heaven)! </div><div class="separator" style="clear: both;"><br></div><div class="separator" style="clear: both;">Winter Luxury is a smaller pumpkin, with netting marking the surface, it is suppose to make a delectable pumpkin pie, with a velvety smooth texture. To allow steam to vent. And I baked it, whole, in the oven at 350-degrees until it smushed, about an hour or so. I put it cut side down and baked it at 425 degrees until tender (about 45 minutes for mine). </div><div><br></div><div>Remove from oven, let cool enough to handle, then scrape pumpkin. The pie recipe calls for 2 cups pumpkin purée. Other ingredients are:</div><div>12 oz evaporated milk</div><div>2 eggs</div><div>1/4 cup packed brown sugar</div><div>1/2 cup sugar</div><div>1 Tbs molasses</div><div>1/8 tsp allspice</div><div>1/8 tsp ground cloves</div><div>1/4 tsp nutmeg</div><div>1/4 tsp ginger</div><div>1 tsp cinnamon</div><div><br></div><div>Mix all ingredients in blender until smooth. Pour into pie crust. Remove the rind. The easiest way is to cut the melon as you normally would. Cut off all pink flesh (the part you typically eat), then using a vegetable peeler, peel off the green skin. Cut the rind into about 1" pieces. </div>

Prepare the brine. </div>

1/4 cup salt to 1 qt water. Put all cut rind chunks in brine. Let sit overnight.</div>

Just like my tomatoes and apples, most pumpkins are heirlooms. <div>1) Rouge Vif d'Etampes</div><div>2) Lumina</div><div>3) Musquee de Provence</div><div>4) Connecticut Field</div><div>5) Luxury Pie</div><div>6) Jarrahdale</div><div>7) Jack o'Lantern</div><div><br></div><div>We've had a very wet season, most unusual for this time of year. Several of our pumpkins were hit with powdery mildew, and then finished off by squash bugs! The patch grew strong all season until this past month. In the course of 2 weeks several of our vines died. Luckily I think we'll get at least one pumpkin of each! The coloring is just starting to turn, they're beautiful! But despite all the neglect, the garden still grows...as do the weeds! I lost most the garlic because I waited too long to dig it up, now it is lost in the dirt! But I got most the onions, they are pulled and curing. The potatoes are another story...I got most the Kennebec's, but I either lost the Yukon Golds to beetles or to the dirt, either way we got a decent harvest. And the eggplants never rebounded from the battle with flea beetles. <div><br></div><div>All the lettuce bolted, but the beans and peppers are coming in strong! And the tomatoes are just starting to ripen. We even have a few volunteers that self seeded from last year...a brandywine and yellow pear that grew up in the middle of the potatoes! I like Mint Tea, sweetened with Honey after dinner, before bed. The combination of mint and honey helps me to relax and get ready for sleep. <br />

I like Earl Grey Tea, sweetened with sugar and a splash of milk on cold mornings to take the chill off.<br />

And the staple, Ice Tea (aka Sweet Tea) otherwise known as Table wine of the South…<br />
Just like anything else, I have different Tea combinations for different purposes. When I make just my regular everyday Ice Tea, I use Luzianne. But, if it’s a special event I make my Mémé (grandmother’s) tea – which is a combination of Boston Tea Party Exotic Spice, Orange Pekoe, and Constant Comment Orange Spice. And that leaves my Sun Tea…I like to play around and mix it up some. Usually I’ll use Luzianne and Mint, then sometimes mix in an Orange Spice (and personal favorite either Boston Tea Party or Constant Comment) to spice it up a little. <br />
<br />
The idea behind Sun Tea is to use the sun to heat the water, which will steep your tea bags. It’s not an instant process, takes planning and patience, but is a special treat here in the South!<br />
<br />
So, grab yourself some tea bags and a clean, sterile container to steep them in.<br />

*To make an individual batch try using a mason jar! Then once steeped, add sweetner, ice, and drink right out of the mason jar!<br />

Add water and tea bags, place outside in direct sunlight until you’ve reached your desired steeping point. (You can tell by the color of the water, the darker the water, the stronger it is.) It is recommended not to leave it out longer than 4-hours.<br />

*Warning- while using the suns energy to heat the water seem very energy efficient; it can also be very bad for your health if you're not careful. Since the sun won't heat the water to a boil, it won't kill off potentially harmful bacteria, and will actually have the opposite affect...it may encourage breeding. Black Tea, or other caffeinated tea will help ward off the growth of bacteria for a few hours, but herbal tea with no caffeine will not. If your tea appears thick, syrupy, or with ropy white strands throw it out. These are sure signs of bacteria.<br />

While I was knee deep in thorny canes our little girl, Genny, was my protector. She stood guard on the premetor of the patch to ensure I wasn't ambushed....by what I'm not sure! Though, I did stumble upon a hole, tunnel, or den of sorts. She sniffed it out and moved on, so I knew nothing was home!</div>

The next morning, I heated up the vinegar and spices on the stove. Let boil. Drained the vegetables and added them to the pot. Boiled again. Removed from heat and poured into a jar. </div>

We initially though it must be some type of small rodent. Our plan was to put top soil down tonight to get a foot print, put out a trap (just incase that would work), and set up the trail cam on the plant. But my husband didn't recognize the scat and it was driving him crazy until he finally broke down and googling "tomato eater with barrel-like scat". I used a couple tablespoons ground cayenne pepper, a few squirts dish soap, and mixed it all in a gallon water jug. We love it there, of course we go early, usually mid Spring, to beat the tourist season. This was the first year we took Genny (remember our Mountain Cur). She doesn't travel too well in the car, so it was going to be a long drive! The pumpkins leaves and vines are getting so big, they put the melons to shame. <div><br></div><div>Here are my favorites so far...</div><div>This melon doesn't have a disease- Those yellow speckles are part of its charm...the Moon & Stars melon has little yellow speckles (stars) all over, and each melon has one large yellow spot (moon)! The oats and rye act as a stabilizing agent, to allow the clover to root. The radish helps aerate the soil. And the clover adds nitrogen to the soil.<br />

To get started you need something to can. I have about 2 cups pitted sour cherries from our wild sour cherry tree. Since the wild cherries are much smaller, they're harder to pit. So I put them in a pot, with a little water, and warmed them up. Then I dumped them in cheese cloth over a heat proof bowl and let the juices drain. If i wanted cherry jelly I'd stop here- discarding the pulp and only using the clear juice. However I wanted Cherry Preserves, so I mushed the pulp all up, which popped out the seeds. Then I removed the seeds and returned the pulp to the juice. Also, it's time to get your jars ready. Choose the size jars you want, this batch I'm using 4 oz jars. Clean jars with warm soapy water, rinse well. Place clean jars in your stock pot. Some people like to use the canning insert, but I choose not to. So I put in extra jars to fill in space. Also, put in the lids, but not the bands. Fill the pot with enough water to cover the jars by about 1-2". Warm the water, but do not boil. </div>

While the jars are being prepared, let's get our preserves ready! Warm the cherry juice and pulp, gradually adding the pectin. (This batch I used 3 Tbs powder pectin, it set pretty firm, next time I will try only 2 Tbs pectin.) Stirring to dissolve. Bring to rolling boil <span style="-webkit-composition-fill-color: rgba(175, 192, 227, 0.230469); -webkit-composition-frame-color: rgba(77, 128, 180, 0.230469); -webkit-tap-highlight-color: rgba(26, 26, 26, 0.292969);">- one that you can't stir down.</span> Add sugar, all at once. (This batch requires 2 1/2 cups.) Stirring constantly, bring to rolling boil. Boil hard about 1 minute. Remove from heat, skim off any foam (it makes the final product prettier). This recipe calls for almond extract, so I added 1/2 tsp and stirred to distribute. </div>

Remove funnel, using your nifty bubble remover tool, place in the jar and swipe around the edges to remove any air bubbles. Take another cloth, wipe the rim of your jar to ensure it's clean and dry for a good seal. </div>

Screw a band on and using tongs, place the jar back in the hot water. </div>

Continue the process until all preserves are gone. Process jars in boiling water for 10-15 minutes. </div>

Remove each jar. Let them sit undisturbed for 24 hours. Check the seals by pressing down on the center. If it doesn't pop, you're good to go. If it didn't seal, you can refrigerate and use within 3 weeks, or reprocess with a new lid. </div>
